We think Julia Child said it best: “A party without cake is just a meeting.” Whether vanilla, chocolate, simple, elaborate, layered, bundt, or otherwise, cake holds a special place in our hearts. Join our cake-only techniques series to learn new techniques, styles, and recipes for cake preparation and decorating. From classic to modern and everything in between, practice decorating with butter cream, whipping up genoise, or creating luscious fillings to brighten every event with the ultimate symbol of celebration.

This is a live, in-person, COVID-Careful Class to be held at CSCA. 

This series is for adults 18 +. Each class length estimate is 4 hours.

Just Cakes! - Week 1 - Butter Cakes *Series Start*

Week 1 – Butter Cakes: Butter cakes, like pound cake, are high fat ratio cakes that are moist, flavorful, and a great foundation for understading cakes . Our butter cake recipes include many options for fillings such as: jams, ganache, and buttercreams to create showstopping centerpieces.

This series is for adults 18+. Each class length estimate is 4 hours.

Just Cakes! - Week 2 - Foam Cakes

Week 2 – Foam Cakes: Foam cakes, aka Genoise or Sponge, are light, airy cakes made of flour, sugar, eggs, and in some cases butter. The fluffiness comes from beating air into eggs and/or egg whites, which allows subtle flavors to shine.

Take your knowledge of foam cakes and turn them into roulades (jelly roll), or soak them with a flavorful syrup and stack them up high. The fluffy texture will have you coming back for thirds!

Just Cakes! - Week 3 - Flourless Cakes

Week 3 – Flourless Cakes: These naturally gluten-free cakes are decadent, rich, and flavorful. Discover how using natural ingredients such as nuts, chocolate, and eggs can give you the most versatile of desserts that can win over the any dessert lover, gluten-free or not.

This series is for adults 18+. Each class length estimate is 4 hours.

Just Cakes! - Week 4 - Tortes/Layer Cakes

Week 4 – Tortes/Layer Cakes: Put your cake knowledge to the test. These elaborate cakes typically have several layers and can contain, nuts, jams, mousse, chocolate, and much more. You will design a multi-layered torte with cake layers, soaking syrup, fillings(s) and decorations to ensure the cake is the star of the whole menu.
