Join Pastry Chef and chocolate sculpture competitor, Jody O'Sullivan (Culinary World Cup, Mexico Team Member), as he leads students through tempering and casting of chocolate. Students will also learn how to to mold this decadent treat into a work of art. Give it as a gift for a wedding or other special event, or keep it at home to admire!

Advanced Pastry - Chocolate Sculptures - Day 1

Day 1

Tempering and using tempered chocolate in showpieces - students will make components using this technique.

Casting chocolate for supports.

Make Modelling Chocolate (for the 2nd class).

Advanced Pastry - Chocolate Sculptures - Day 2

Day 2:

Using techniques learned from day 1, continue to create pieces to form sculpture with tempering and modelling chocolate.
