Advanced Pastry - Opera Gateau & Sachertorte
Master two of the most famous and decadent cakes from France and Vienna. Opéra gâteau is an elaborate almond sponge cake soaked in coffee syrup, layered with chocolate ganache and coffee buttercream, and topped with chocolate icing.
Sachertorte is a classic Viennese cake composed of two dense chocolate cakes separated by a thin layer of apricot jam, and enveloped in dark chocolate icing, traditionally served with unsweetened whipped cream. Make the cake, cream fillings, ganache, chocolate glazes, and syrups to learn the art of creating an elegant and decadent dessert from start to finish.
This advanced pastry workshop is for adults 18 +. Class length estimate is 4 hours. Younger bakers may attend with permission from CSCA only when accompanied by a parent or guardian.
