Join Chef Adam Shutes from Boston Cheese Cellar to make and taste a variety of fresh and aged cheeses. Make your own fresh ricotta and queso fresco while learning the science behind separating milk into curds and whey, the additives that promote unique flavor profiles, and aging and storing practices that further differentiate our favorite styles of cheese. Taste cheese from Adam’s cellar and discuss the unique profiles of each with your newfound appreciation for the art of cheesemaking.
This workshop is for adults 18 +. Younger cooks may attend with permission from CSCA only when accompanied by a parent or guardian. Class length estimate is 2 hours.
